Cucumber Orange Summer Salad


This delicious salad is perfect for the summer heat and heart healthy. Great for a quick lunch or side item and so refreshing!


1 large English cucumber, sliced into rounds
1 (12 ounce) can of mandarin oranges (drained)
1 teaspoon white wine vinegar
1 Tablespoon olive oil
¼ cup fresh mint leaves
½ cup toasted pine nuts
¼ cup craisins (dried Cranberries)
Salt & fresh ground black pepper

In a large bowl, combine sliced cucumbers, drained mandarin oranges, mint leaves, vinegar & oil. Mix with a spoon to combined and season with salt & pepper to taste.
Sprinkle with toasted pine nuts & craisins.

Simply Delicious!
